Homemade wholegrain goodness.

Multi-Seed/Grain Cracker Recipe:


In the spirit of getting into better shape in 2011 we are trying to cut out empty carbohydrates around here.  Unfortunately, today I was really in need of some crispy, delicious crackers.  I didn't feel like going to the store because one: I haven't put Sadie's new carseat in the truck yet, two: my chevrolegs are too sore from this morning's INSANITY workout to take me there, and three: I really didn't feel like paying $7 for a box of wheat thins today. So I decided to make up my own recipe using all healthy whole ingredients, and it turned out very good.



Here's whats in there:
2 cups wholewheat flour
1 1/2 cup 7 grain cereal--run through the blender to make it finer (oats would work too)
1/2 c. flax meal (wheat germ would be a good substitute)
5 T.  miscellaneous seeds  
(I used hemp and chia seeds, but sunflower, poppyseed or pumpkin seed would all be yummy)
2/3 c. water
1/2 c. oil


Mix all ingredients. The dough should stick together but not be too wet.  I dived the dough in half, rolled it out on tinfoil sheets and scored it into squares with a pizza cutter.  Then I just put the whole tinfoil sheet on a cookie tray and into the oven to bake at 375 until they are golden brown and crispilicious (mine took about 25 minutes--and I rolled them pretty thin.) This recipe made two cookie sheets worth--probably 70ish crackers. 

* I am thinking that this recipe would be very easy to make gluten-free.  You could just sub out the wheat flour for brown rice flour and use oats instead of 7 grain cereal.  I might try that next. 

I am munching the crackers now as I finish this post, and they are making me feel all good inside....must be all that hemp seed uhh-hu-hu-hu (that's for you Ana;)
